
Today I am sharing with you a chocolate coconut candy that turned out heavenly and healthy! Double win! I love coconut and I love chocolate!! And good for you..not I got your attention!

Did I mention ……I love coconut, and I love chocolate 🙂 well when I spotted a recipe on “Whole New Moms” site for No bake Almond Joy bars, I was inspired to give it a whirl. I tweaked them to my liking and I also made it into a smaller batch and they turned out yummy & sweet! Also take a visit to her site you may find other yummy treat-ideas that inspire you, she has some good ones!

I am always trying to make things that are sweet aaaaannd healthy…….. aaaannd taste GOOD and that’s always a challenge!
….But I am very happy to announce, these lil treats passed the family test of yumminess! My girls and husband loved them, soooo over the weekend, I tried them out when my boys came over to visit for dinner on Sunday. Well they were a definite hit! They look time consuming, but they are easy! Yes Easy! Your gonna love em!
Now another thing I love about these, is there’s LOTS of room for variations! You can make them into bars, roll them into balls or make them in cupcake papers for a treat that resembles pb cups! You can put almonds on or leave them off! You can drizzle them with chocolate or leave them without – but however you choose I know your going to love them!

Dunked or drizzled its really hard to go wrong 🙂
Bottom layer:
¼ c coconut oil -melted
¼ c almond butter
¼ c sweetener – I use a blend of Truvia and granulated monk fruit. (it needs to be a dry one not a wet one like honey or maple syrup, they won’t work well in this recipe). *
* Note: Any sweetener you typically use for no-bake treats should work fine here, so coconut sugar, THM’s sweet blend, Truvia or even organic white sugar. I need to do a post on how I make my Baking sweetener Blend, which is a mixture of them and I store it in a jar ready for using in all my healthy and THM recipes. I’ll try to do that soon, so keep watch or sign up for my news letter so you won’t miss when it comes out 😊
3 Tablespoons organic baking cocoa or Cacao (both work well)
½ teaspoon Vanilla Extract
Top layer:
¾ c + 1 Tablespoon Coconut – (I use unsweetened shreds)
3 1/2 Tablespoon coconut oil melted- very warm
¼ c sweetener same as above (or about 2 donks pwd stevia)
¾ tsp. vanilla extract
1 teaspoon arrowroot powder
10-12 whole almonds
Bottom layer
1. In small bowl stir together all the ingredients well, using a rubber spatula.
2. Spread into parchment lined pan or into cupcake liners
3. Press gently and smooth out.
4. Refrigerate while you prepare the top layer
Top layer:
1. In a small bowl, stir all the ingredients together well, except almonds!
2. Spread this layer, onto the bottom layer that’s chilled.
3. Now press your almonds on top (this is optional)
4. Lastly drizzle with melted chocolate chips, chill and enjoy!
This made 12 lil’ candy cups or a small square pan of bars (about 8 x 6 size) and if you line your pan with parchment you can lift it right out easily and cut them up once there hard. Parchment paper and cupcake liners make these quick and low-mess! (I love that)
I only used about a Handful of almonds total – for placing on the tops of each one! So very few are of those are needed.

Chocolate drizzle : I used “Enjoy Life” brand chocolate chips but any quality brand you like, will work. (LINK the choc chips to lucky with referral numer to it) Melt a handful chocolate chips in a lil stainless steel cup on the stove for about 60 seconds, stir until melted and then drizzle over tops. I know, like it doesn’t get any easier! Yes I literally used just a handful of chocolate chips as well and melted them right on stove, in less than 60 seconds! (a handful is approx 1/3 cup 🙂
(Note: You’ll need to store these in the frig until ready to serve because the healthy coconut oil, softens after a while, at room temp so they can become a lil sticky.)
As for THM – I think these are an“S”treat? Maybe a THM friend can share in the comments below? They definitely hit the mark of being a TASTY HEALTHY YUMMY! And those 3 requirements are tough to accomplish in sweet treats!

Yummy Chocolate Almond Joy Bites!

Ingredients

Chocolate drizzle
1. Melt about 1/3 c of your favorite wholesome chocolate chips, in a small stainless steel measuring cup or pan on the stove top, for about 60 seconds (on low) and stirring until completely melted. Drizzle on top!
Makes 12 candies or fits an 8 x 6 pan or container.
