Fun and Easy Chocolate Confetti Cupcakes

Do you need something that’s Easy and Simple to take to a sweet friend who needs a lil encouragement!

 …. Well that was my inspiration for these super duper easy any body can make Yummy Chocolate Cupcakes, with cute little pops of encouragement ! ! ! !

I wanted to make something special to take to a sweet friend who needed a lil encouragement and these were it! Simple chocolate cupcakes with creamy chocolate frosting then topped with words of cheerfulness!

Well most that know me, know I love to make things to GIVE! ……. aaaand that also I love to use skewers….for many things!  (They’re almost as handy as canning jars, they can be used for soooo many things 🙂

  1. Ok, I said I kept it simple and I did. I used a chocolate cake mix, baked them into moist cupcakes according to directions and Then I made a batch of my creamy homemade Better-than-Store-Bought chocolate frosting, yes I share that recipe below. Or you could use store bought frosting, but why would you! ❤️

2. Once my cupcakes were baked and cooled,  I simply piped the chocolate frosting on the cupcakes using a disposable frosting bag and my favorite go-to tip number 12, (but any tip will work so just use whatchya-got ????) Then, using a spiral motion I swirled it on thick, and they turned out cuuute! 

3. Now To make the Sticks: I simply typed some encouraging words on my computer, yes on a simple word doc. I used bright colors for my font choice, then I added a circle around my words, yep just using Microwsoft Word. No fancy program at all. Then hit print:) I know EASY right!   One sheet was all I needed

4. Next I quickly punched the words out using my round paper punch! Mine was a circle punch that was 1 7/16 inch (this is basicall close to 1 1/2inch size). Again use what you have, most of us have some kind of  paper punch. Then using my scallop punch which is a hair bigger, I punched more circles, using bright aqua cardstock (from my paper scrap bin). Then last using a dab of Tacky glue, I sandwiched the skewer in between the 2 circles!  So the words are on the front and the aqua cardstock color is on the back of the skewer. So now the scallop color behind shows and looks cute. Whaaa-laa done!

5. Now top each cupcake with a pinch of sprinkles (yes just a pinch, less is best here:)…….and Poke in your bright colored words of encouragement….and these chocolate delights are ready to give!

Ok as I mentioned above, here is My good ole favorite Better-than-Store-Bought Chocolate Creamy Frosting!

Creamy Chocolate Buttercream Frosting:

2 2/3 cups powdered sugar
2/3 cup real butter (not margarine, it won’t work in this recipe)
¾ teaspoon real vanilla extract
1/3 cup baking cocoa ( I always use organic)
2 Tablespoons milk ( or more as needed to make it really creamy, reg milk or nut milk works fine)

  1. Beat all the ingredients together in a small mixing bowl until creamy, and Add milk a little at a time. Fill your pastry bag.
  2. Pipe frosting onto cooled cupcakes. I used tip #12.  (this creamy frosting is also great for a 2 layer cake, on bars, or even brownies, its fab!  (I can eat it right off the spoon!❤️ )  Don’t say I didn’t warn ya:)  Refrigerate any leftovers, which are good for up to 2 weeks. Now when my kiddos were young, I would let them spread leftover chocolate frosting on a gram-cracker and they thought they were in heaven to get a slather of this creamy chocolate stuff on a gram!   

These really were simple cupcakes to make.

Just moist chocolate baked cupcakes, topped with creamy Chocolate buttercream frosting, and bright words of encouragement, poked amidst cheerful sprinkles 🙂

Now perhaps you want to bring some for a co-workers birthday! You could put them in the break room, everyone will enjoy a cupcake and wish them a happy birthday all day long!

Yes indeed there are So many fun ways to use these Chocolate Cupcakes sprinkled with confetti sprinkles 🙂

So if you have a friend or neighbor that could use a lil bit of encouragement with something they’re going thru …..this is an Easy idea that will surely brighten their day!
