Fall College Boxes

Do you know someone going off to college this fall and would you like an idea to bless them? Well several kids from our church headed off to different Bible colleges again this fall and my daughter and I decided to send out these boxes packed with fall delights to encourage their hearts while away from home.

We got some small flat rate boxes from the post office and filled them with brown shredded paper. Then we set some nice red apples we shined up into the shreds and included a carton or two of either caramel dip or peanut butter caramel dip. Then to top it off, we sprinkled in a handful of peanut butter cups and included a note with an encouraging verse. Its a great way to send an unexpected blessing!

Something else I have sometimes included in my Fall College Boxes that’s really easy is Fall Cheerio Crunch.  This caramal crunchy mix packs and ships very well!

 

Fall Cheerio Crunch
- 1 C brown sugar
- ¼ C butter
- ¼ C honey or maple syrup
- ½ tsp. salt
Combine the above ingredients in a pot and heat on medium heat until bubbly at the edges. Cook an additional 2 minutes, stirring constantly.

Remove from heat and add:
- 1 Tbsp. vanilla
- ½ tsp. baking soda
Stir until foamy and light colored (30 seconds or less)

Now pour all over a mixed bowl of:
- 6 C cheerios
- 1 C whole or halved peanuts (we like to do ½ peanuts and ½ pecans)
- 1 C raisins – optional
Stir this until well combined.

Pour onto an 11 x 15 parchment-lined baking sheet (or just grease your pan well) and bake for just 12 minutes at 250 degrees. If you’d like to make it a tad sweeter and more colorful, when you take it out toss onto the sticky mixture a couple handfuls of fall M&Ms. Loosen a bit from pan edges if any is sticking, then let cool completely until firm and then break into pieces. Enjoy and good luck staying away from this deliciously crunchy mix!
